It´s pumpkin season… Besides being delicious, pumpkins are very healthy, too.  Their color will bring warmth into every home and make gloomy fall days less monotones. Pumpkins are often on our menu, these days and we are trying to make the best of pumpkin season. One of the recipes that we all love and often prepare is a Pumpkin Pancakes recipe.

All you need to prepare these delicious pancakes are a few simple ingredients that can be found in every fridge. Pumpkin pancakes are perfect with maple syrup, or you can add a piece of butter or some whipped cream instead and your perfect breakfast is done. You´ll enjoy every bite of it, I´m sure!

What do you need to prepare pancakes recipe?

  • All purpose flour
  • Baking powder
  • Baking soda
  • Ground cinnamon
  • Ground nutmeg
  • Salt
  • Light brown sugar
  • Milk
  • Vanilla extract
  • Eggs
  • Pumpkin puree
  • Unsalted butter

How to prepare Pumpkin pancakes recipe?  

First, you combine flour, light brown sugar, baking powder, baking soda, cinnamon, nutmeg and salt, then add milk, egg, melted butter, vanilla, pumpkin puree and whisk until it becomes smooth.  Be careful not to over mix. Meanwhile, heat a lightly oiled griddle or non stick pan over medium heat, then pour 1/4 cup of batter into the pan, spreading gently so that a circle is formed.  After that, fry it until bubbles appear or the pancake is golden brown, then flip over and fry the other side until it´s golden brown, too.  Repeat the same with the rest of batter and serve pancakes with maple syrup, honey, butter, whipped cream or ice-cream.

Ingredients

  • 2 cups All purpose flour
  • 6 tablespoon light brown sugar
  • 2 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 3/4 teaspoon salt
  • 1 1/2 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 2 Eggs
  • 1/4 cup Unsalted butter, melted
  • 1 cup Pumpkin puree
  • 1 teaspoon Vanilla extract

Instructions

  1. Start by combining flour, light brown sugar, baking powder, baking soda, cinnamon,
    nutmeg and salt in a large dish.
  2. Then make a hole in the middle and add milk, egg, melted butter, vanilla, pumpkin puree and whisk  until smooth. Be careful not to over mix. 
  3. Meanwhile, heat a lightly oiled griddle or non stick pan over medium heat, then pour 1/4 cup of batter into the pan, spreading gently so that a circle is formed.
  4. Fry it until bubbles appear or the pancake is golden brown, then flip over and fry the
    other side until it´s golden brown, too. Fry each side for about 2-3 minutes.
  5. Repeat the same with the rest of batter and serve pancakes with maple syrup, honey,
    butter, whipped cream or ice-cream.
