Pumpkin Ginger Muffins are topped with sugar and cinnamon. Pumpkin is  healthy and rich in vitamin A, which is traditionally a good energy source.

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

Sweet Spicy Pumpkin Ginger Muffins are perfectly tasty and moist. Flavors of pumpkin, topped with cinnamon for the best muffins recipe ever.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp of salt
  • 1 tsp cinnamon
  • 3/4 cup sugar
  • 1 tsp extract vanilla
  • 2 large eggs
  • 1/2 cup olive oil
  • 1 cup pumpkin puree
  • 1/4 tsp ground ginger
  • Sprinkle:
  • 1/3 cup of sugar
  • 1-2 tsp cinnamon

Instructions

  1. Preheat oven to 350º F. Line a 10-cup muffins pan with paper liners, set aside. In a large bowl mix dry ingredients (all-purpose flour, baking powder, baking soda salt, cinnamon, ground ginger, white sugar and a vanilla extract).
  2. In a medium bowl whisk the 2 eggs, add a1/2 cup of oil and 1 cup pumpkin puree.
  3. Compile both of the mixture, pour into pan and bake for 25-30 minutes.
  4. Sprinkle with mix content of sugar and cinnamon.
