I like its simplicity. Fresh Berry Cream Cake a simple cake, easy to make and it is sooooo delicious. I like simple and quick recipes. Isn‘t it great to make a cake in 45 minutes and  spend the rest of the day with your loved ones, family and friends, your pet or any other way you prefer.

I love summer and nice weather and I especially enjoy spending time with my family outdoors.  We always make something delicious, and one of the desserts we love is Easy Fresh Berry Cream Cake. Good food + good company + beautiful countryside = a perfect picnic 🙂

This cake looks great, even without fresh berry sauce, it is very soft and moist, but with the sauce it has a special taste. Ingredients

  • BERRY CAKE
  • 1 cup all purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup butter, softened
  • 1/2 cup + 2 tablespoon granulated sugar
  • 2 eggs
  • 1 1/2 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cup berry mix (raspberries, blueberries and blackberries)
  • FRESH BERRY SAUCE
  • 2 cup berry mix (raspberries, blueberries and blackberries)
  • 2 tablespoon sugar

Instructions

  1. Preheat the oven to 350 F. Line a 9 inch spring form pan with parchment paper. Set aside.
  2. In medium dish combine flour, cornstarch, baking powder and salt. In a separate dish put butter and ½ cup of sugar and mix with an electric mixer, medium speed until it becomes light and fluffy.
  3. Add one egg at a time, vanilla extract and sour cream and mix until well combined.
  4. Then, add dry ingredients and mix at minimum speed until you get fine dough. Separate1/3 of berries and leave aside.
  5. Gently fold berries into batter with a spatula, do not beat in. Spread the dough in the already prepared spring form pan.
  6. Sprinkle with the rest 1/3 of berries and 2 spoons of sugar. Bake for 35-40 min or until toothpick inserted in the center of the cake comes out clean.
  7. Leave in the spring form pan to cool for a couple of minutes, and then transfer to a wire rack to cool completely.
  8. FRESH BERRY SAUCE: Put berry mix and sugar in a food processor and puree until smooth. Remove the seeds, using sieve.
  9. Serve with whipped topping and fresh berry sauce.

Notes

Berry sauce should be kept refrigerated no longer than 2 days

    Can I make this gluten free by using Pillsbury gluten free multi purpose flour blend?

      Hi Bonnie,
      thanks for stopping by.
      I used 1 cup of all purpose flour, 1/4 cup of cornstarch and 1 tsp of baking powder.
      I didn`t use gluten free flour.

      Hi Liz,

      A regular cake pan, lined with greased parchment paper, will do just fine as a substitute for a springform.

      You can try with frozen fruit. If the dough is too wet, you can add little flour.
