What do you need to make this Cheesecake Banana Bread Crumb Cake?

  • CRUMB FILLING
  • 1 stick cold unsalted butter, cubed
  • ½ teaspoon ground cinnamon 
  • 1 cup all purpose flour
  • ⅛ teaspoon salt 
  • 1 cup light brown sugar
  • BANANA CAKE
  • 2⅛ cups all purpose flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 teaspoon baking powder
  • 2 ripe medium bananas
  • 1 sticks unsalted butter, softened
  • 2 eggs
  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • ⅔ cup milk
  • ⅓ cup semi sweet mini chocolate chip
  • CHEESECAKE FILLING
  • 8 oz full fat cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 tablespoon all purpose flour
  • GLAZE
  • ½ cup powdered sugar
  • ¼ teaspoon vanilla extract

I added some cinnamon for better taste and smell.  I adore the smell of freshly baked Cheesecake Banana Bread Crumb Cake. Crunchy crumb topping put over soft cake is so good.  This cake is buttery, light, and fluffy with cheesecake in the middle. How to make Cheesecake Banana Bread Crumb Cake?

  • CRUMB TOPPING
  • Put all the ingredients in a large bowl and cut them with a fork or pastry cutter to get crumbs. Keep refrigerated while making a cake. It should be cold.
  • BANANA CAKE
  • Preheat the oven to 350 F. Butter and flour 9 inch spring form pan or spray with non-stick spray. In a large dish combine flour, cinnamon, salt and baking powder. Set aside. Mash bananas. Combine mashed bananas with butter, add eggs, sugar and vanilla and whisk. Keep adding flour mixture and continue whisking. Finally add milk and whisk until well combined. Fold the mini chocolate chips into the batter. Pour ⅔ of the batter in the spring form pan and spread evenly. Save the rest for later.
  • CHEESECAKE FILLING
  • In a separate dish mix cream cheese with sugar until creamy. Add an egg, flour and vanilla and mix until well combined.
  • Spread the cheesecake filling over the batter so that it does not touch the sides of the spring form pan. It should be at least 1 inch away. Place the remaining batter over the cheesecake filling and put crumb on the top.
  • Bake for 65-75 min or until the toothpick comes out clean or with a few crumbs on it. If the crumb topping gets dark brown, cover the cake with aluminum foil.
  • Take out of the oven and leave to cool in the spring form pan for 20 minutes.
  • When the cake is ready to be served, make the glaze. Combine all the ingredients in a medium dish, until smooth. Drizzle over the cake.

I just made this, the first thing that struck me when reading over the recipe was the obscene amount of sugar in the cake. If your bananas are ripe enough, you do NOT need 2 full cups. I reduced it to a single cup, and it's still too sweet. I can't even imagine what 2 cups of sugar would've tasted like - just in the cake alone!

As for the crumb topping, there is far too much flour in that. I felt uneasy about it from the start, and I was right to, because it came together like pebbles in a pile of sand. Since I did not want to waste the ingredients by tossing it, I had to add probably 50g (about 3 tbsps.) more butter as quickly as possible so it wouldn't melt. That seemed to help. Still, to anyone who bakes this - go easy with the flour in the crumble topping.

In the end, I baked the cake for 50 minutes, as long as I could before the topping started to get too browned. It's an extremely heavy batter, so it's going to feel dense and slightly under baked even after you've let it cooled for the suggested amount of time. I expect when it's fully cooled off, it might solidify a bit more. The tricky thing about this cake is, because it has a crumb topping, the topping might harden as it bakes, leaving you wondering what the batter is doing underneath. The cake may fall after you take it out of the oven, and you'd never even know it. Bake it as long as you can, according to the recipe. Loosely drape a piece of foil over it if the topping starts to burn before you reach 50 minutes. In my case, I omitted the chocolate chips and the glaze topping, because frankly - with all the sugar in the recipe already, it felt like it would've been overkill - and it was a good call!

The cake is tasty, but a banana cake need not be so decadent. I'll probably freeze half of it, and enjoy the rest in very small pieces. I'll add the recipe to my cookbook with the adjustments I made (possibly with even less sugar), and just follow those from now on, because I can imagine I'd like to make it again the next time I have some leftover cream cheese.
