What makes this dessert amazing is its crunchy Oreo crust, smooth and creamy peanut butter cheesecake filling with chunks of Reese’s peanut butter cups and chocolate ganache. I like to prepare it, especially for some special events and I can be sure that all my guests will love it. It is so quick and easy to make, you won’t need an oven, only a fridge for the dessert to cool, so it’s a good idea to prepare this dessert a day before. These are all the reasons I make Reese’s Peanut Butter Cheesecake so often.

 

Which ingredients are necessary to make Reese’s Peanut Butter Cheesecake?

  • Oreo cookies, I used regular Oreo cookies
  • Butter – unsalted, melted
  • Cream cheese – I used regular cream cheese, softened at a room temperature
  • Creamy peanut butter – not a natural peanut butter
  • Granulated sugar
  • Vanilla extract
  • Heavy whipping cream
  • Powdered sugar
  • Mini Reese’s or snack size Reese’s cups, cut into small pieces (cut mini Reese’s in half and Reese’s cups should be cut in 6-9 pieces)
  • Semi sweet chocolate or chocolate chips

How to prepare Reese’s Peanut Butter Cheesecake? 

Begin by preparing the pan. I used a 9 inch spring form pan that I lined with parchment paper and sprayed with non stick spray. Next, make Oreo cookies crust – put Oreo in food processor and pulse until you get fine crumbs. Then, mix the Oreo crumbs with melted butter and press the mixture into the bottom and sides of a spring form so that a solid layer is formed. Put it in the fridge to cool until you finish cheesecake filling. 

The next step is a cheesecake filling. Begin by mixing cream cheese and granulated sugar until its smooth, and then add peanut butter and vanilla extract and mix some more until it’s combined.  In a separate dish, beat heavy cream with powdered sugar until stiff peaks form and put in a dish with cream cheese and peanut butter mixture and mix some more until it’s well combined. Finally, add chopped Reese’s and stir gently. Spread cheesecake filling over Oreo crust evenly, put it in the fridge and let cool for at least 6h, possibly overnight.

To prepare chocolate ganache, begin by heating heavy whipping cream that should be removed from heat before boiling. Use it to spread over chopped chocolate or chocolate chips, cover and leave for 2-3 min and then whisk until it becomes smooth.  

Pour ganache over the cheesecake and spread evenly to the edges. Top with chopped Reese’s.

Ingredients

  • OREO CRUST:
  • 1 pack. (14.3 Oz) Oreo cookies
  • CHEESECAKE FILLING:
  • 24 Oz Cream cheese, softened at a room temperature
  • 6 tablespoon Unsalted Butter, melted
  • 1/2 cup Granulated sugar
  • 1 cup Creamy peanut butter not a natural peanut butter
  • 1 teaspoon Vanilla extract
  • 1 1/3 cup Heavy whipping cream
  • 1/2 cup Powdered sugar
  • 10 Oz Mini Reese’s or snack size Reese’s cups, cut into small pieces (cut mini Reese’s in half and Reese’s cups should be cut in 6-9 pieces)
  • GANACHE:
  • 4 Oz Chocolate chips or Semi sweet chocolate, chopped
  • 6 tablespoon Heavy whipping cream
  • 5 ounces Mini Reese’s or snack size Reese’s cups. Cut mini Reese’s in half and Reese’s cups should be cut in 6-9 pieces)

Instructions

  1. Begin by PREPARING THE PAN - use a 9 inch springform pan that should be lined with parchment paper and sprayed with non stick spray. Set it aside.
  2. To make OREO COOKIES CRUST - put Oreo in food processor and pulse until you get fine crumbs. Then, mix the Oreo crumbs with melted butter and press the mixture into the bottom and sides of a spring form so that a solid layer is formed. (You can use a solid object like a measuring dish, to help.)
  3. Put it in the fridge to cool until you finish cheesecake filling.   
  4. To prepare CHEESECAKE FILLING – Begin by mixing cream cheese and granulated sugar until it’s smooth, then add peanut butter and vanilla extract and mix some more until it’s combined. Use a large bowl.
  5. In a separate dish, beat heavy cream with powdered sugar until stiff peaks form, then transfer to a bowl with cream cheese and peanut butter mixture and  mix some more until it’s well combined.
  6. Finally, add chopped Reese’s and stir gently. Spread cheesecake filling over Oreo crust evenly, wrap it with plastic foliage and put in the fridge to cool for at least 6h, possibly overnight.
  7. To prepare CHOCOLATE GANACHE - begin by heating heavy whipping cream that should be removed from heat before boiling. Use it to spread it over chopped chocolate or chocolate chips, cover and leave for 2-3 min and then whisk until it becomes smooth.
  8. Pour ganache over the cheesecake and spread evenly to the edges.
  9. Top with chopped Reese’s. 

Notes

Keep it refrigerated for 4-5 days.
