Cream Cheese Chicken Flautas – crunchy tortillas, juicy chicken and melted cheese make an incredible combination. These flautas are made of shredded cooked chicken, cream cheese, cheddar cheese, sour cream, spinach, salsa and different spices, all rolled up in tortillas, then baked or fried and finally served with salsa, guacamole sauce or sour cream.

In my family, everyone likes this dish, so I often prepare it. You will love this Mexican dish, especially if you are a fan of Mexican cuisine, like I am. That’s why Mexican dishes are often on our menu. I like a combination of tortillas, meat and cheese, in every way possible. 

What is the difference between flautas and taquitos? Basically, it’s the same dish. Taquitos are made of small corn tortillas, while flautas are made of larger flour tortillas. They resemble a musical instrument, the flute, so in Mexico they are called flautas or tacos dorados. They are actually rolled up tacos. These flautas can be baked in the oven or fried in deep oil.

I tried both with Cream Cheese Chicken Flautas and I can assure you that both variations are delicious. However, I give a slight advantage to fried flautas, because they are much crunchier than baked ones. I often bake them, because it’s easier, there are less calories and your kitchen will stay clean. I’m sure you’ll find your favorite version.

Which ingredients are  necessary to make Cream Cheese Chicken Flautas?

  • 8 inch Flour tortillas,
  • Cooked or rotisserie chicken
  • Cream cheese
  • Sour cream
  • Hot salsa
  • Cheddar cheese
  • Baby spinach
  • Garlic powder
  • Onion powder
  • Cumin
  • Paprika
  • Salt and pepper

How to prepare Cream Cheese Chicken Flautas?

To make the filling – mix together cream cheese, sour cream, salsa and spices, then add shredded cooked chicken, chopped spinach and shredded cheddar cheese and stir until it’s well combined. Heat tortillas in a non-stick frying pan for about 15 seconds, on each side, then place them on a plate and cover with thin foliage to stay warm. 

To assemble flautas – put 1/4 a cup of filling on tortilla and spread like shown in the picture. Then, roll the tortilla tight and use toothpicks to tighten it and prevent filling from spilling. 

To bake flautas – preheat the oven to 425F. Next, line a baking sheet with parchment paper or spray it with nonstick spray. Then, place flautas and spray tops with nonstick spray. Bake them for about 20 minutes, or until they are crunchy. 

To fry flautas – put 1 inch oil in a large frying pan (cast iron skillet is the perfect option), heat it to medium high temperature and then fry flautas, both sides until they are golden and crunchy. Fry 2-3 flautas at a time, then place them on a plate lined with paper. Serve flautas with guacamole sauce, salsa or sour cream.

NOTES:

How to store the leftovers? Store them in an airtight container and keep refrigerated, up to 3 days. Make sure to warm them in a microwave oven or oven before serving.

Can Cream Cheese Chicken Flautas be made ahead? You can make the filling the day before serving and keep them in the fridge. When you take them out, leave them at room temperature for a few minutes, then fill the tortillas and fry or bake them. 

Can I freeze Cream Cheese Chicken Flautas? Yes, you can. Make the filling and roll the tortillas up. Place them in a baking sheet and leave in a freezer for an hour, then transfer them to a Zip lock freezer bag. Tortillas prepared this way can be kept in the freezer for 3 months.

Before frying/baking, take them out of the freezer and place on a baking sheet lined up with parchment paper or sprayed with nonstick spray. Cover them with a foliage and bake at 350F for about 20 min, then remove the foliage and bake for another 20 minutes, or until they are crunchy. 

A tip: Keep flautas warm while frying, by putting a wire rack over the baking sheet in the oven and heat it to 200 F. Place flautas on a paper towel after frying to absorb the extra fat, then put them on a wire rack in the oven to keep them warm, while you fry the rest of the flautas.

Ingredients

  • 8 (8 inch) Flour tortillas
  • 2 1/2 cups Cooked or rotisserie chicken, shredded
  • 6 ounces Cream cheese, softened
  • 1/4 cup Sour cream
  • 1/3 cup Hot salsa
  • 1 cup Cheddar cheese, shredded
  • 1 1/4 cup Baby spinach, chopped
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 1/8 teaspoon Cumin
  • 1/4 teaspoon Paprika
  • Salt and pepper to taste

Instructions

  1. To make the filling - Start by mixing together cream cheese, sour cream, salsa, garlic powder, onion powder, cumin, paprika, salt and pepper, in a large dish. Next, fold in shredded cooked chicken, chopped spinach and shredded cheddar cheese and mix some more until it’s combined. Set it aside.
  2. Heat tortillas in a non-stick frying pan for about 15 seconds, on each side, then place them on a plate and cover with thin foliage to stay warm.
  3. To assemble flautas - Place 1/4 a cup in the center of a tortilla and spread it evenly. Roll it up tight and use a toothpick to prevent filling from spilling.
  4. To bake flautas- preheat the oven to 425F.
  5. Next, line a baking sheet with parchment paper or spray it with nonstick spray. Next, place the flautas seam side down and spray the tops with nonstick spray.  Bake them for about 20 minutes, or until they are crunchy.  
  6. To fry flautas- put 1 inch oil in a large frying pan( cast iron skillet is the perfect option), heat it to medium high temperature, to 325F  and then pick flautas up with tongs, put them in hot oil seam side down and fry both sides until they are golden and crunchy, for about 3-4 minutes. 
  7. Fry 2-3 flautas at a time, then place them on a plate lined with paper towels. Serve flautas with guacamole sauce, salsa or sour cream.
