What ingredients are necessary to make Buffalo Chicken Tortilla Roll Ups?

  • Chicken – I used shredded cooked chicken, but rotisserie chicken can be used, too
  • Cream cheese – I used regular cream cheese. If you prefer light cream cheese, you can use it instead
  • Cheddar cheese – grated, or Colby jack cheese
  • Blue cheese – crumbled
  • Hot sauce
  • Garlic powder
  • Salt
  • Chopped green onion
  • Large flour tortillas, not corn tortillas. 

How to make Buffalo Chicken Tortilla Roll Ups?

Whisk together softened cream cheese, hot sauce, garlic powder and salt. Add grated cheddar, crumbled blue cheese and green onion and stir with a wooden or plastic spatula to combine. Finally, add chicken and stir well. After dividing the filling among 6 large tortillas, spread it evenly. Roll the tortillas tight and then wrap in a plastic wrap and leave in the fridge for 3h minimum. Take them out before serving, unwrap and cut with a serrated or sharp knife to 0.5 inch slices. Serve them with ranch dressing.

TIPS AND TRICKS:

  • Make sure that your cream cheese is soft enough, so that there aren’t any lumps.
  • The chicken shouldn’t be too moist, drain extra water from cream cheese and don’t  put too much hot sauce, so that your roll ups aren’t soggy.
  • How to store Buffalo Chicken Tortilla Roll Ups? In the fridge – no longer than two days, wrapped in a plastic wrap. In the freezer – up to 3 months.
  • Can I use corn tortillas? I wouldn’t recommend corn tortillas, because they’re less pliable and can break easily. It will be difficult to roll them nicely.

Instructions
